Cornbread Salad

My mom told me about this & I all but refused to try it. Once I did, I cou;dn't get enough. This really is a yummy recipe!
Cornbread Salad

1 recipe of cornbread (crumbled)

1 chopped green pepper

1 chopped tomato (I use grape tomatoes)

4-6 chopped green onions

1/2 chopped purple onion

1 bag real bacon bits

1 can whole kernel corn drained

1 bag shredded cheddar cheese

salt & pepper to taste

enough mayonnaise to moisten

Mix all of the above ingredients & top with cheddar cheese. Refrigerate several hours. (It tastes best if made the night before you plan to serve.)


1 1/2 cups self rising cornmeal

1/2 cup self rising flour

1 egg

1 cup milk

Preheat oven to 400 degrees. Put a teaspoon of oil in cast iron skillet and heat. Mix all ingredients and pour into heated skillet. Bake for 30 minutes or until golden brown.
